Thai food from the south is extremely hot if compared with Thai food from other parts of Thailand. One of the most well-known southern Thai food is Kaeng Tai Pla and Satow.

Kaeng Tai Pla -  It is considered as a thick soup that is really salty and spicy. The color of the soup is in dark yellow because of turmeric. Tai Pla is called fish kidney in English which consists of liver, kidney, maw and heart of mackerel or other fish mixed with salt. Kaeng Tai Pla has two types including the watery type and the meaty type. For the meaty type, it will produce the soup to become more aromatic.

Also, there is another type of Kaeng Tai Pla. It uses coconut milk instead of water. This soup has a sweeter and smoother taste.

People in central region of Thailand prefer cooking Thai food with smooth, mellow, and sweetish taste. Decoration also plays a significant role on dining table as all the dishes will be decorated with flowers, carved vegetable and fruit.

Steamed rice is a main dish for every household in the central plain. Usually there will be about three to four side dishes to go with rice. Soup like Gaeng Som (spicy vegetable soup), Gaeng Phed (Thai red curry), and Tom Yam (spicy soup) are some of the typical that regularly served with chili fried meat dishes such as Pad Phed, Panaeng, and Masaman.

Thais in central region also like to have salads. Yam Tua Pu or salad with roasted beef are ones of their favorite. Other common dish that can easily be found in Thai food of central region are Nam Prik (chili paste), steamed vegetable, fried local herring, and Thai-style omelet.

Similar to food from the North, sticky rice is always found as a main character of every meal in Thai food of the northeast. Apart from this glutinous rice, a meal set usually comes with traditional dishes such as spiced ground meat with red pork blood, spicy papaya salad (Som Tam), roasted fish, roasted chicken, and fermented fish chili paste (Nam Prik Pla-raa).

Due to the drought of northeast region, fried meat and deep fried insects which can simply find locally like frog, lizard, snake, rice field rat, and large red ants are another favorite dish among northeast people in general, while pork, beef, and chicken are preferred by well-to-do families.

In serving, northeast Thai food will be placed in a large enameled tray decorated with large and colorful flowers.

Northern Thai food is uniquely cooked to represent the rich culture of the northern people. The recipe of northern Thai food usually features fresh vegetable and indegenous ingredient which are found in their neighborhood.

Steamed glutinous rice or sticky rice, chili pastes in a diversity such as "namprik noom," "namprik dang," and "namprik ong," kaeb moo (deep fried crispy pork rind), and spicy soup/curry (gaeng) for example, "gaeng hang-le," "gaeng ho," and "gaeng kae" are ones of the most representative dishes of northern Thai food.

Another famous dish that attracts a number of food lovers to Northern Thai dishes is "Sai Ua." Sai Ua is a spicy minched pork sausage grilled over a smoky coconut husk fire.

Northern Thais have their own dialect in calling meals differently from central Thai people. The breakfast is called "khao gnai," usually comes with sticky rice and other simple dishes like chilli paste and gaeng. The steamed glutinous rice will be cooked in the early morning and packed in a small wicker basket made from bamboo or palm leaves.

Normally, Thai meals come either in a single dish or in a form of family meal consisting of complementary dishes served with rice to share with all. Shared meals are usually served a variety of food more than the number of guests at a dining table. For example, two diners will order three dishes in addition to their own plate of steamed rice, three diners four dishes, and so on. The greater the number of diners, the more dishes ordered. Diners choose whatever they favor from shared dishes and add it to their own rice.

Thai food was traditionally eaten with right hand, but fork and spoon are now used generally. However, people in north and northeast Thailand usually have meals with sticky rice which allow them to frequently eat with their hand. Knife and chopsticks can be found on the table and are normally used for eating steak or noodle soups.

A variety of sauces and seasonings is commonly found on Thai dining table. These may include Nam Pla (fish sauce), Nam Pla Phrik (fish sauce with lime juice, chopped chili, and garlic), cayenne, sweet chili sauce, pepper, spicy chili sauce, ketchup, slice chili peppers in vinegar, sugar, or sometime even MSG.

For Thais, rice is the main part of their meals. It can be said that without rice, it wouldn't be a full course of Thai food. However, eating rice alone is not a real Thai food at all. That's why Thais serve a variety of food with rice.

In Thailand, food is one of the most topic to think about. Thais love to greet others by asking “Gin Khao Rue Yang” which means “have you eaten yet?” or to be more specific, “have you eaten rice yet?” The phrase has shown how much Thai people concern about food and rice eating.

Usually, Thai food will come with rice and Thais love to have rice with their meals. Having sandwiches or things other than rice can't be called as a meal to Thais. Especially to a young group of people, they don't really sit down and have a proper meal, rather, they eat when they feel hungry.

It is wise to be careful when you have Thai food or have a meal with Thai people because you might gain more weigh back home.
